Comforting slow-cooked beef paired with crisp broccoli in a savory-slightly-sweet sauce — perfect for hands-off weeknight dinners.

Ingredients

1.5 lbs lean beef stew meat, cut into bite-sized pieces

4 cups fresh broccoli florets, washed and trimmed

1 cup low-sodium soy sauce or tamari

1/2 cup beef broth or water

1/4 cup brown sugar or maple syrup

3 cloves garlic, minced

1 tbsp grated fresh ginger

2 tbsp cornstarch mixed with 3 tbsp cold water (slurry)

1 tbsp toasted sesame oil (optional)

Salt and pepper to taste

Instructions

1. Place beef in slow cooker.

2. Mix soy sauce, broth, brown sugar, garlic, and ginger; pour over beef.

3. Cook on low 6–8 hours (or high 3–4 hours) until beef is tender.

4. Add broccoli 30 minutes before serving.

5. Stir in cornstarch slurry to thicken; cook uncovered 30 minutes.

6. Finish with sesame oil, season, and serve over rice.

Notes

Make ahead: prepare beef and sauce; add broccoli when reheating.

Freeze beef+sauce up to 3 months; blanch and freeze broccoli separately.

Substitute tamari for gluten-free option; use honey instead of brown sugar if desired.
