Thick, chewy, and festive chocolate chip cookie bars loaded with green candies for a perfect St. Patrick’s Day celebration.
1 cup (226g) salted butter, melted and slightly cooled
1 cup (200g) dark brown sugar, packed
1/2 cup (100g) granulated sugar
2 large eggs, room temperature
1 tablespoon vanilla extract
2 1/4 cups (280g) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
1/2 cup green M&Ms or festive sprinkles
1.Preheat your oven to 350°F (175°C) and line a 9×13 inch pan with parchment paper.
2.In a large bowl, whisk the melted butter, brown sugar, and granulated sugar until smooth.
3.Add the eggs and vanilla extract, whisking until well combined.
4.Gently fold in the flour, baking soda, and salt until just combined—do not overmix.
5.Fold in 1 cup of the chocolate chips and half of the green candies.
6.Spread the batter evenly into the prepared pan and top with remaining chips and candies.
7.Bake for 25-30 minutes until the edges are golden brown and a toothpick comes out mostly clean.
8.Allow the bars to cool completely in the pan before lifting out and slicing.
Use dark brown sugar for a deeper, more molasses-like flavor.
Do not over-bake; the center should still look slightly soft when removed.
Store in an airtight container to keep them soft for days.
