A juicy, herb-infused ground beef loaf rolled with a molten center of fresh spinach, mozzarella, and provolone cheese.
2 lbs ground beef (85/15)
1 cup Italian breadcrumbs
2 large eggs
1/2 cup grated Parmesan cheese
4 cloves garlic, minced
1/4 cup fresh parsley, chopped
1 tsp dried oregano
2 cups fresh baby spinach
8 oz shredded mozzarella
4 oz provolone slices
1 cup marinara sauce
1. Preheat oven to 375°F.
2. Mix beef, breadcrumbs, eggs, parmesan, garlic, herbs, and 1/2 cup sauce.
3. Flatten meat into a rectangle on plastic wrap.
4. Layer provolone, spinach, and mozzarella over the meat.
5. Roll tightly using the plastic wrap and seal the edges.
6. Place seam-side down on a baking sheet.
7. Bake for 45 minutes.
8. Brush with remaining marinara and bake 15 more minutes.
9. Rest 10 minutes before slicing.
Seal edges tightly to prevent cheese from leaking.
Use a digital thermometer to reach 160°F.
Substitute spinach with bell peppers for variety.
