1 tbsp olive oil
1 yellow onion, diced
3 carrots, chopped
2 celery stalks, chopped
4 garlic cloves, minced
1 inch fresh ginger, grated
1.5 tbsp ground turmeric
2 sweet potatoes, cubed
6 cups vegetable broth
1 can full-fat coconut milk
2 cups fresh kale
Salt and pepper to taste
1. Sauté onion, carrots, and celery in oil for 5 minutes.
2. Add garlic, ginger, and turmeric; stir for 1 minute.
3. Add sweet potatoes and broth; simmer for 20 minutes.
4. Partially blend soup with an immersion blender.
5. Stir in coconut milk and kale; simmer 3 minutes.
6. Season with salt, pepper, and lemon juice; serve hot.
Store in glass containers for up to 5 days.
