2 lbs chicken breast, cubed
1/4 cup extra virgin olive oil
3 tbsp fresh lemon juice
1 tbsp red wine vinegar
4 cloves garlic, minced
2 tsp dried Greek oregano
1 tsp smoked paprika
1 tsp sea salt
1/2 tsp black pepper
1. Whisk marinade ingredients in a large bowl.
2. Add chicken and coat thoroughly.
3. Marinate in fridge for 2-4 hours.
4. Thread chicken onto soaked skewers.
5. Grill on medium-high for 8-10 minutes.
6. Rest for 5 minutes before serving.
Use chicken thighs for more moisture.
Soak wooden skewers for 30 minutes to prevent burning.
Serve with pita and tzatziki sauce.
