1/2 cup white chia seeds
2 cups unsweetened coconut milk
3 tbsp pure maple syrup
1 tsp vanilla bean paste
1/2 cup chilled lemon curd
1 tsp fresh lemon zest
Pinch of sea salt
1.Whisk chia seeds, milk, syrup, and vanilla in a bowl.
2.Let rest for 5 minutes, then whisk again.
3.Refrigerate for at least 4 hours to set.
4.Stir the pudding to loosen the texture.
5.Layer pudding and lemon curd into four jars.
6.Top with lemon zest and serve chilled.
Use homemade or store-bought lemon curd.
Store in the fridge for up to 5 days.
Swap coconut milk for almond milk if preferred.
