A perfect blend of sweet heat, this Honey Harissa Chicken features juicy thighs glazed in a smoky, spicy North African marinade.
2 lbs chicken thighs (skin-on, bone-in)
3 tbsp harissa paste
1/4 cup raw honey
4 cloves garlic, minced
2 tbsp extra virgin olive oil
1 tbsp lemon juice
1 tsp ground cumin
1/2 tsp smoked paprika
Salt and black pepper to taste
Fresh cilantro for garnish
1. Preheat oven to 400°F (200°C) and line a sheet pan.
2. Whisk harissa, honey, garlic, oil, lemon juice, and spices in a bowl.
3. Pat chicken dry and coat thoroughly with the marinade.
4. Arrange chicken on the pan skin-side up.
5. Bake for 25–30 minutes until the internal temperature reaches 165°F.
6. Rest for 5 minutes, garnish with cilantro, and serve.
Use boneless thighs for a shorter cooking time (about 20 mins).
Adjust harissa amount to control the spice level.
Serve over couscous or in a grain bowl with fresh veggies.
