Incredibly soft and chewy green mint cookies loaded with refreshing mint chocolate chips and dark chocolate.
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup brown sugar, packed
2 large eggs
1 tsp peppermint extract
Green food coloring (gel preferred)
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 1/2 cups mint chocolate chips
1/2 cup dark chocolate chips
1. Preheat oven to 350°F and line baking sheets.
2. Cream butter and sugars until fluffy.
3. Mix in eggs, peppermint extract, and food coloring.
4. Gradually add dry ingredients and mix until combined.
5. Fold in chocolate and mint chips.
6. Scoop dough balls onto sheets.
7. Bake 10-12 minutes until edges are set.
8. Cool on sheet for 5 minutes before moving to rack.
Chill dough for 30 minutes for thicker cookies.
Use a cookie scoop for uniform size.
Store in an airtight container for up to 5 days.
