A healthy, restaurant-quality beef and broccoli made easy in the slow cooker. Features tender beef in a savory, slightly sweet ginger sauce.
1.5 lbs flank steak or sirloin, thinly sliced against the grain
1 lb fresh broccoli florets
1 cup beef broth
1/2 cup low-sodium soy sauce
1/3 cup brown sugar
1 tbsp sesame oil
3 cloves garlic, minced
1 tsp fresh ginger, grated
2 tbsp cornstarch + 3 tbsp water (for slurry)
Sesame seeds and green onions for garnish
1. In the slow cooker, whisk together beef broth, soy sauce, brown sugar, sesame oil, garlic, and ginger.
2. Add the beef strips to the sauce and toss to coat.
3. Cover and cook on LOW for 4-5 hours or HIGH for 2-3 hours.
4. 30 minutes before serving, whisk cornstarch and water to create a slurry and stir into the pot.
5. Place fresh broccoli florets on top of the beef, cover, and cook for the final 30 minutes.
6. Stir to coat the broccoli in the thickened sauce and serve.
Always slice beef against the grain for maximum tenderness. Add the broccoli only at the very end to keep it bright green and crisp.
