A healthy, no-cook breakfast that tastes like a slice of carrot cake, filled with fiber and warm spices.

Ingredients

1/2 cup Old Fashioned Rolled Oats

2/3 cup Milk of choice

1/4 cup Greek Yogurt

1/3 cup Finely Grated Carrots

1 tbsp Maple Syrup

1 tsp Chia Seeds

1/2 tsp Cinnamon

1 tbsp Raisins

1 tbsp Chopped Walnuts

Instructions

1.In a mason jar, combine the rolled oats, chia seeds, cinnamon, and a pinch of salt.

2.Add the milk, maple syrup, and Greek yogurt, stirring until well combined.

3.Fold in the finely grated carrots, raisins, and half of the chopped walnuts.

4.Seal the jar with a lid and shake or stir one last time to ensure no clumps.

5.Place in the refrigerator to soak for at least 6 hours or overnight.

6.Stir before serving and top with the remaining walnuts and a dollop of yogurt.

Notes

Use a fine grater for the carrots so they blend seamlessly into the oats.

If the oats are too thick in the morning, add a splash of milk to loosen them up.

These will stay fresh in the refrigerator for up to 5 days.
