2 lbs boneless skinless chicken breasts
1 cup Italian dressing
2 tbsp butter, divided
8 oz sliced mushrooms
1 medium yellow onion, sliced
1.5 cups shredded Monterey Jack cheese
1 tsp garlic powder
Salt and pepper to taste
1. Pound chicken to even thickness and marinate in Italian dressing for 30 minutes.
2. Sauté mushrooms and onions in 1 tbsp butter until golden; remove from pan.
3. Sear chicken in remaining butter for 5-6 minutes per side until 165°F.
4. Top chicken with mushrooms, onions, and cheese.
5. Cover skillet until cheese melts. Serve hot.
Use a meat thermometer for juicy chicken.
