A perfect balance of savory canned meat and sweet teriyaki glaze atop seasoned sushi rice, wrapped in crisp nori.

Ingredients

1 can (12 oz) Canned Luncheon Meat (Spam)

2.5 cups cooked sushi rice

2 sheets sushi nori, cut into strips

2 tbsp soy sauce

2 tbsp sugar

1 tbsp mirin

1 tsp vegetable oil

Instructions

1. Whisk soy sauce, sugar, and mirin to make the glaze.

2. Slice the meat into 8 pieces and fry until crispy.

3. Pour glaze over slices and cook until sticky.

4. Place a nori strip down and use a mold to shape 1/3 cup of rice.

5. Top with a glazed slice and wrap the nori tightly.

Notes

Use warm rice for better molding.

Wrap tightly in plastic for on-the-go snacks.

Add a thin egg omelet for extra flavor.
