1 medium Green Cabbage, chopped
2 large Carrots, sliced
2 stalks Celery, diced
1 Yellow Onion, chopped
3 cloves Garlic, minced
6 cups Chicken Broth (or vegetable broth)
1 can (14.5 oz) Diced Tomatoes
1 tsp Dried Oregano
1/2 tsp Turmeric
Salt and pepper to taste
1 tbsp Lemon juice
1. Sauté onion and celery in a large pot until soft.
2. Add garlic and cook for 1 minute.
3. Stir in cabbage, carrots, broth, and tomatoes.
4. Add oregano, turmeric, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 25 minutes.
6. Stir in lemon juice and serve hot.
