1 cup lentils
1 block tofu
2 cups assorted vegetables (carrots, bell peppers, zucchini)
1 can chickpeas
2 cups cooked quinoa
2 cups tomato sauce
2 cups spinach
1 tbsp olive oil
1 tsp garlic, minced
Salt and pepper to taste

Instructions

1. Rinse lentils and cook according to package instructions.
2. Press and cube tofu.
3. Chop vegetables into bite-sized pieces.
4. Heat olive oil in a pan and sauté garlic and vegetables until tender.
5. Add tofu and chickpeas, cook 5 more minutes.
6. Stir in cooked lentils and tomato sauce, season with salt and pepper.
7. Serve over cooked quinoa or enjoy as is.

Notes
